Added my All trails data as an activity and it deleted all the steps I took during those hours and replaced them with 615. How do I get those steps back? It was over 5k steps taken during my hike.

When you manually log an activity, that overwrites any data in that time period.

Manually logging is meant for times when you were not wearing the tracker.

If you delete the activity you manually logged, the original data will reappear.
