I'm going totally insane trying to get fitbit notifications to work with my new phone. I'm trying all sorts of combinations of turning off bluetooth, restarting, uninstalling the app, ensuring notification settings allow everything, and nothing seems to work
I can get it to work for a very small period of time (post install of the app) but as soon as I restart the phone, notifications are gone, and I get the 'notification service not running. A phone restart is required to re-enable notifications on your tracker' And restarting definitely does not work
Any advice would be great fully received before I chuck this useless fitbit in the bin...

I will gladly help you set them up. I appreciate the explanation and the initiative to try and solve this on your own. I recommend you take a look at the following article: Wie erhalte ich Benachrichtigungen von meinem Smartphone auf meinem Fitbit-Gerät?.
Please note that many Android devices have settings to optimize battery usage. That means stopping apps that are running on the background when are not used. Those seem to be the default settings for every app. You can change those settings for every single app. The Fitbit app needs to be allowed to run in the background, so that the connection for the notifications persists: Why does the Fitbit app need to run in the background on my Android phone?. Go to your settings and tap on "Apps". A list of apps will be alphabetically displayed. Tap on Fitbit and then under "permissions" you should enable "auto start" and for the energy savings program, no restrictions. The settings vary from phone to phone but I am sure you will be able to find them with these instructions.
