My Fitbit charge 3 won't connect to the app. It's constantly showing the wrong time and hasn't logged any information in days. I have done a hard reset, a soft reset, I have deleted the device and re-paired it and I have uninstalled the app and reinstalled it. Nothing works!

Have you looked at the sync help docs? Or android docs?
Where you able to shut down the Charge 3 for a hard (ware) restart?
Deleting the device from the phones bluetooth often helps, the user should not be able to pair the tracker, you did, you will not be able to sync.
telling fitbit that you do not want to use the tracker will never fix a sync issue but dig the hole deeper.
Did you remove the tracker from the Fitbit account and where able to set it up
