Similar issue here, upgrade from Pixel 3XL to Pixel 6 Pro. My Ionic notifications worked on the first day, but seemed to have stopped. Checked app settings and everything is enabled. Restarted phone/ionic, still unable to recieved notifications.
Any help would be greatly appreciated!

@KoVeRt00 Welcome to the forums. I moved your post here in order to maintain order in the community. Thanks for explaining. I will gladly help you set up notifications on your new Pixel 6 Pro.
Given that your Fitbit device was connected to another smartphone, you will have to do the following to set notifications up with your new smartphone. Please open the Bluetooth settings on your previous smartphone and remove the Ionic from the "paired devices". Either tap on the gear or "i" icon next to "Ionic" and tap on "forget" or "unpair". Next you will have to set up notifications on the new smartphones. Follow these instructions after you have removed the Ionic from the Bluetooth list on your previous smartphone: How do I set up notifications?. You do not have to pair them manually over the Bluetooth settings. The Fitbit app will take care of the connection between your Ionic and your new device.

I have just upgraded from pixel 3xl to 6 Pro and ran into the same issue with my Fitbit Ionic. Try this, it worked for me.
I uninstalled the Fitbit app from my phone. I then reinstalled the app from the app store. During the setup of the app informed me the watch needed an update. Once the update was done I was able to sync again
