A Fitbit uses an instrument called an accelerometer to detect motion patterns and certain patterns are detected as an activity, even if it is incorrect. I have gotten outdoor bike while driving my car because of the road surface. It is a limitation of the technology.
You can delete those bike rides that were tracked by mistake. To prevent them, you should turn off outdoor bike on the list of auto-recognized activities. On your phone app:
- Tap on your exercise tile
- Tap on the gear icon
- Tap on outdoor bike and toggle the auto-recognize to off
