Where do I change the photos display in my watch?

I think you are using a clockface or an app which displays a photo of your own. It would hel if you tell us which you are using.

Generally the next steps will help:

goto your fitbit app on your phone
goto settings
goto your fitbit name like "Sense" ( in the screen on your phone)
goto the Gallery ( it's also in the screen on your phone)
there you see all clocks and apps that are installed on your fitbit device

Find the clockface (or app) and select that.

And there you should be able to change the photo that was seen on your fitbit device.
