Let me help you get your Fitbit to sync to your Pixel 3.
My first recommendation would be that you try to go through the steps listed in this help article. That should definitely help in getting your Fitbit to sync once again.
In the meantime, I'd like to ask what Fitbit device are you trying to sync and also when did the issues start.

I also have tried everything.. my Pixel 3 bluetooth will not recognize my fitbit ionic.
-even factory reseting the watch does nothing.

Thanks for brigning this up and trying everything that was recommended.
There is a known issue with Android 9 that causes syncing to not work. Some users have had some success with turning off Background Restrictions/Limitations: Phone settings > Apps & Notifications > Fitbit app > Background restrictions or Background limits.
Then, disable battery limitations:
- Go to Settings > Apps > Fitbit app > Advanced > Battery > Battery optimization
- Change view to All apps
- Search for Fitbit app
- Choose Not optimized
Please give it a shot and keep me posted on how it goes.
