I have a Google Watch 3 and a Pixel 8 Pro. The data from phone stopped sync'ing with application on phone. I followed all the debugging instructions (disconnected watch, deleted and re installed app, etc.). I contacted Google Support and was advised that they are aware that the product is defective however there is no plan/date for resolution.
As this is my third Google Watch and my fifth Pixel I would assume Google would provide better/any support. If the current product is defective there should be an immediate resolution and/or refund. Needless to say as a customer (and shareholder) I am extremely disappointed.

Pixel Watch 3 and Pixel 6a user here. As of today my Watch, phone, Fitbit app, and Health Connect are syncing.
(I'm not going to bring up the broken Strava and MyFitnessPal syncing issues.)

Have you had a chance to update the Fitbit app to version 4.34.1 yet? I've seen some Pixel Watch users report that the app update fixed their syncing issue.
