By any chance, are you manually starting your sleep from your Fitbit device or are you letting the device automatically detect your sleep? In order to get sleep stages, the Fitbit device has to automatically detect your sleep start & wake times.
Since you're having problems with sleep tracking, you won't see a Readiness score since that algorithm now uses data from your sleep tracking. This help page explains how the Readiness Score is calculated (<-- click link)

Hey, thank you for your answer. I normally let my Pixel Watch 3 detect my sleep automatically.
After a week i just restarted my Watch and everything works again. So i just had a week without all datas. She is working fine again :))
