A warm welcome to the community forums @BWLim.
Thank you for taking the time to share with me this information about the difficulty with your Fitbit app.
Let's try the following steps to troubleshoot the application and see if that resolves the issue:

Hello @BWLim
I've noticed that the SpO2 reading is routinely the last one to show up in my Fitbit app. Sometimes, it doesn't show up for at least an hour or so.
Does your SpO2 data eventually show up?

Hi @BWLim
If I'm reading your reply correctly, you are eventually seeing your SpO2 reading in the app. But it's taking a day for it to show up. Is that right?
Out of curiosity, how often do you open the Fitbit app during the day? If you don't open the app very frequently, it could be that your tracked data is taking longer for it to sync with the app.
Please consider reporting this using the Feedback feature in the Fitbit app:

Fitbit support team acknowledged the issue. Temporary fix will be forcing stop to fitbit app and restarting it again. I have tested for 2 days so far, it works. But they agreed that this solution is not acceptable and working toward a permanant fix but without indicating any time frame. Furthermore they also agreed that some other health metrics which uses spo2 as a variable to calculate may become inaccurate.

Hello @BWLim
Thanks for sharing what Support told you. At least doing a Force stop is relatively easy & quick to do. Still, it's not ideal.
BTW, I noticed that there's more details for the app updates other than "bug fixes & improvements". Although I didn't see this specific issue mentioned in the 4.58 update change log that just started rolling out, the fix might be in this new update or the next one.

For the pass weeks, I noticed that some time, on my watch, the data for previous day gone missing. As can be seen in the following photos for Saturday(yesterday). So there are 2 issues here, data delayed by 24hrs on Fitbit app and missing data on pixel phone.
