Take a look at how extremely close fitbit sleep data is with MyAir (cpap machine) data.
Everyone complains that the data is bad now, but this seems to argue it's never been better.
I am on a pixel watch, so that may be a key difference.

I am also using a Google watch. I needed to replace my Sense 2. Although I liked the Sense 2, it didn't have the newer sensors. The closest replacement with the new sensors was the Google Watch 3. Tracking accuracy appeared to increase in multiple functions with the newer sensors. The sleep data improved again with the new algorithm.
Seeing some of these posts, I have wondered if the new algorithm might use one of the new sensors. Your post appears to indicate that my guess might be correct.
