I have a fit bit charge. I don't like my message content to display, but I want to be notified of a message. I was able to do this once before, but don't recall how. If device matters, it's a Note 5.

Hello there, @Jrledb74! Thanks for joining the family! With the Fitbit Charge the only notifications you can receive are call notifications, at the moment there is no option for messaging notifications.
Are you sure is with this tracker that you want this option?

Normally this is comtrolled by a setting in your messaging app. The Fitbit app simply forwards to the Blaze what it has intercepted.

As our good friend said, @Rich_Laue, to chose to see only the sender go to your app settings and select the option from there.
