Your Fitbit tracker is like a wall (analog) clock. When it loses power it stops tracking time and when it gets power again it picks up right where it left off.
It sounds like you depleted the battery on your Versa and you didn't plug it in to charge until around 10.5 hours later. So the moment your Versa has enough of a charge, sync it. It automatically sets the time when you sync it.
