I have tried all of the methods. Up until last week, could force the sync by deleting the cache and restarting phone and watch. This would work for a day or two. The phone had stopped recognizing the versa in the bluetooth menu, but would sync anyway, with help. In the past 24 hours, the watch will not sync at all.
Frankly, restarting the watch three times, cleaning storage, and also restarting the phone is above and beyond broken.
FitBit, please help, before I have to go back to my regular clockwork watch.

Hi @ButterflyD. Welcome! It's nice to see a new face around.
Thanks for letting me know about your Versa's behavior, as well for the troubleshooting steps tried prior posting. Let me explain that your LG V20 isn't part of our compatible devices, meaning that the Fitbit app hasn't been optimized for this phone and for this reason some features might not always work. While there isn't any guarantee, please give a try to the following steps:
I'll be around, keep me posted.

I'm in the same boat with my V40. Worked until a week or two ago and went through all the steps listed (and more) and cant get it to connect to my phone or even my ipad.

I did a full reset last night, and it synced!
Until this morning. 😞 Back to no connection. Grr

I did that last night. It connected, but by this morning, it's back to being invisible.

Hi @AlissaF and @ButterflyD. It's great to see you here. I'm sorry for the delayed response.
@AlissaF, thanks for sharing your phone's details and it seems yours is also not compatible with the Fitbit app as it doesn't appear in our official list. As mentioned to @ButterflyD, currently there isn't a guarantee that it'll always work since our team hasn't confirmed a full performance of Fitbit app on both models.
I appreciate your efforts while in troubleshooting your watches and since the issue persists, I'd recommend to try syncing with a compatible phone/tablet or Windows 10 computer with built Bluetooth. This way we can confirm if the model of your phone is the cause of this situation. For more details about syncing with Windows 10, please check this help article.
Hope to see you around.
