This icon keep vanishing off my dashboard why how can I get it to remain

Make sure having the latest fitbit app version installed.

 
Feel free to clear the Fitbit App cache on the phone, all your data stays intact, the fitbit app will recreate the cache when syncing with your account.
 
Sometimes installing new app updates over existing ones, while using the cache for the previous app version(s).. can cause bugs / glitches.. like a app not loading, or crashing..

Thanks for the clarification. I have moved your thread to the Android board as I think that it is much better suited for it.

 

As for the situation itself, what exactly do you mean that the water icon is vanishing? Could you get a screen shot of how it looks when you have the icon and another for when you don't? That should give me a better understanding of what is going on.
