Anyone know if it's possible to switch from the basic google maps to google satellite maps to track walks / run / bike etc on android? Please

No but you can export the GPS and import to Google maps or earth.

Thanks for the info, I managed to download the GPS data to the laptop but now can't work out of find in the FAQ now to upload or view in google satellite

Hi, I linked my fitbit app with my strava app, fitbit has an auto activity upload and they can use satellite map with road name etc overlays.
