I know that if you put a waterproof case on fitbit blaze it doesn't function to its fullest potential. I work in an animal shelter though, and I'm always getting wet. So I have a few questions.
To what extent is the blaze really waterproof? If it's getting splashed every day for hours on end will it be okay? Are there any waterproof cases in existence? Is it best to just take it off for work?

It's not advertised as waterproof. It's advertised as water resistant.
Water Resistance
Fitbit Blaze is sweat, rain and splash proof, but is not swim proof. We recommend taking it off before showering, as it’s best for your skin if the band stays dry and clean.

Maybe this is your best answer? Otherwise, I'd verify with support that the warranty would be covered if you really want to wear it.
