Whilst I understand that calories burned calculations are at best, inaccurate. My place currently has me at 428 steps, which allegedly used 594 calories and one flight of stairs.
I woke and went to the kitchen and I live in single floor accommodation.
How can I reset the counter to a more realistic count?

I don't think you can reset the counter, however for a more accurate measure don't wear the watch too much. one thing about the caolrie count is that we burn calories no matter what we are doing. on average a person burns about 1800 calories a day.
