Has anyone else experienced trying to change the clock/display on the watch through the app and when it's done "updating" it goes back to original? Also for the in app dashboard, when saved it just goes back to default... any help would be great.

You may not be "setting" the new choice @Herbaflo. To change my Blaze face, I go to my mobile, launch the app, touch the account icon, touch Blaze, touch (to check) the face choice, then account again. Touch dashboard and swipe down to sync anew.
It sticks. How do these steps work for you?
