I see that the Fitbit App has a built in GPS function that gives you a map of where you exercised. What I am unsure about is that the Fitbit Blaze has GPS functionality that taps into the phones GPS. If I do the following it turns on
Exercise | Run | Connecting to Phone | Lets Go
When I am finished am I able to see the map on my phone after my run or walk on the Fitbit app or do I have to turn on both for that?

Welcome to the forums!
No you do not have to turn it on to see the map. Once it syncs to your device you will see the map
The manual is here if you want to learn more about your device

I ran today with my blaze and it alerted me that it disconnected from my phone and there was no map, why would this happen?

Did you have your phone with you on the run?

Yes, both the phone app and the Dashboard on the web site will show you all of the maps starting with your first tracked run.
