Is there any way to put your sleep on the today screen?
I think it needs to be there.

Which format are you referring to, web or app, then which device..

On all the dashboards, not sure about iOS app, the today screen is customizable and yes the sleep tile can be added if it is not there.

On the actual watch itself under the today option there no way to look at sleep. It would be nice to not have to open the app in order to see my sleep.

No there isnt, your watch does not know when your asleep,. This is determined on the server after the first sync apon waking uo.. Sometimes i find it takes up to 8 hours for sleep to show up.
