GPS tracking - difference between watch and phone

The other day I was tracking my run on the FitBit app on my phone when I realised it wasn't showing on my watch. So at a specific point on the run I started the tracking on my watch too. For the following 6 or 7 km, depending on whether you trust my phone or my watch they proceeded to record my distance and speed differently. My Blaze relies on my phone for GPS tracking. My watch was on one hand and my phone in the other. So why was there such a difference in what they recorded?

From what I've read the phone records the mileage from the GPS information so should be the most accurate. The watch uses your stride length and multiplies it by the number of steps to work out the distance. I think you can set your own stride length or use whatever it estimates. Also, as you use GPS more it uses that information to automatically adjust your stride length accordingly.

Thank you for your comments. It goes part of the way to explain it but I have been using the two together for months now and so I would have thought they would be better aligned.
