Is there a way on the dashboard to change the exercise type if your device incorrectly chooses the exercise that you were doing? For instance it shows bicycling when I was actually mowing the lawn, walking behind the mower and doing other yard work. I'd like to leave it as walking.

Nevermind, found it. There is a little edit (pencil) icon on the exercise page. I clicked on that and was able to edit the exercise name. (Log -> Activities -> Activity History)

Yes, you should be able to edit the type of exercise if it was created by smarttrack. Look for a pencil icon next to the activity on your activity list. You can rename it -- once.
As an aside, you might want to go to settings -> exercise goals, and "ignore" autorecognized exercises you never do. For example, I don't have access to an elliptical, and don't want to use the "sports" or "aerobic workout" categories, so I've ignored those three activities, and my fitbit can't erroneously log them anymore.
