All Fitbit trackers can record detailed minute-by-minute data for seven days, so if you're able to sync weekly your complete minute-by-minute-data will be available. Now, daily totals are stored for 30 days for all trackers, so if you're only able to sync monthly you can still see your daily totals on your dashboard.
All this means that you should be able to store all these information for 7 days when it comes to activity tracking (detailed minute by minute information) without any problem.

You will need both, bluetooth and wifi to sync your tracker. Bluetooth is needed to transfer the information from your tracker to your mobile device/PC and wifi or internet connection in general is needed for that information to be saved on your online dashboard. Both work together so if you only have wifi but not bluetooth or vice versa, the syncing process will not complete.
The steps are calculated by a 3-axis accelerometer which understands your motions. An accelerometer is a device that turns movement (acceleration) of a body into digital measurements (data) when attached to the body. By analyzing acceleration data, our trackers provide detailed information about frequency, duration, intensity, and patterns of movement to determine your steps taken, distance traveled, calories burned, and sleep quality. The 3-axis implementation allows the accelerometer to measure your motion in any way that you move, making its activity measurements more precise than older, single-axis pedometers.
GPS is basically just used when you're tracking a run or a hike for example. This will be more accurate for tracking distance as you can see in this post of how to use your tracker and MobileRun altogether for precise distance.

Does it need bluetooth on if I've got wifi?
I'm also confused quite HOW it calculates steps if it doesn't have GPS and if I don't swing my arm when walking?

Thanks for reply.
My step count doesn't seem accurate at all.
Today I did a really long walk and "felt" my 13,000 steps (many of which I think came errounously from the earlier bike ride) where as yesterday I seemed to be clocking up the steps with very little.
IF I were to walk around with GPS on, but not log it as an exercise, will it help? From what you're saying, probably not! I'm very little at just 5ft but I thought that was being taken into account.
Finally (for now anyway!), whilst at work, it'll be nearly impossible to get my 250 steps/hour. Is there anyway this target can be lowered? It looks set,
