I've done absolutely everything to try and re-set Time and Date on my Blaze.My next move may be to head to the garage and get my biggest hammer and pound this thing into a million pieces.

We can't manually set the date or time on our fitbits. Instead they should reset themselves whenever they sync to our phone or computer based on the date / time of that device. Does your fitbit seem to be syncing ok? Has it been through the initial set up ok?
The only other thing that affects the time is the timezone setting in your profile at https://www.fitbit.com/user/profile/edit but as your date is wrong too then I doubt this is the issue.
