My phone has stopped recieving notifications, looking at the Fitbit app I have no options in there any more to set any settings/options to receive notifications or even to do a test call.
This setting was definitely in app and working previously.

Thank you so much for informing us about this situation and for all your efforts.
Can you please check which Fitbit app version you have? Please check if you have the "do not disturb-" or "sleep" mode on.
When you tap the devices icon and then your device, does the option "Notifications" not appear?
In the meantime I'd suggest you delete the Fitbit app and reinstall it, then try to follow all the troubleshooting steps described in this help article: How do I get notifications from my phone on my Fitbit device?

here is a pic, the app says it's updated to the latest version on 08 Jan 2024. I did try uninstalling and reinstalling the app, and the watch is not in sleep or DND mode.
