Is there a way to just show my step count on my Charge 5? The other stats are useful but I'm happy to check them on my phone. The only thing that I want to see on my wrist is the step count but all the displays seem to show other stats and I end up having to scroll through the other stats to get to steps (often scrolling past it).

Which clock face are you using on your Charge 5? There are other clock faces in the Gallery section of the Fitbit app where you can choose a different clock face that shows your step count on the main display.
If you haven't changed the clock face before, this help page (<-- click link) has the instructions.

Hey. I have already been working my way though the clock faces, but none will let me just have the steps locked on the home screen, so if I set it to show step count, by the next time I look at it, inevitably I'll have bumped my wrist and it will be showing HR or something that I'm not really interested in and I have to cycle through again. Bit of a pain. I'm surprised that fitbit dont have customisable watch faces. I can't imagine it would be too difficult to implement.

Thanks for letting us know that you've already been trying different clock faces.
The clock face that I was using on my Charge 5 is called "Runline" which shows Active Zone Minutes, Steps, Distance, & real time heart rate. This one doesn't scroll through the various metrics when you tap on it. See if this clock face meets your needs.
