I have a new Charge 5 now with Premium, after multiple other Fitbits.
I have sleep set to Sensitive because I have long thought Fitbit was overestimating my sleeping time. Today after I woke I got out of bed and then did various things on my phone. When I checked my Fitbit sleep, it thought all that time I was still asleep.

As "first aid", I'd suggest to to restart your device following these instructions:
1.) Connect your Charge 5 to the charging cable which has to be connected to a power source.
2.) Press the button located on the flat end of the charger 3 times within 8 seconds, holding each press for about 1 second(!).
3.) Wait around 10 seconds to see if the Fitbit logo appears.
setting your sleep sensitivity setting to default and giving your new Charge 5 a period of adjustment.
Also I would reset sleep sensitivity to default and give your new Charge 5 some time to adjust to your sleeping behavior.

Thanks for your reply, but I don't understand "the button located on the flat end of the charger".

@Kerry_AU The button is located on the underside of the charging cable's USB plug.

Thanks again. I had not noticed that was a button (on the charger). My fitbit currently still thinks I'm asleep if first thing in the morning I spend some time with my left hand still (even after getting up and walking around for a bit) but I'll give it longer to "learn".

I have options of 'Sensitive' or 'Normal'. (Since you first replied to me) I have now selected 'Normal'.

I sync my fitbit as soon as I wake which seems to alert it that I am awake and that always seems to work for me,
