At work, I am not allowed to carry my phone but require watch/time keeping device.
Charge 5 consistently stops working part way through the day. Today it was 11.15am. It will restart with the charger, but I shouldn't need that part way through the day.
When I put watch on charger this afternoon, it showed close to 90% charge.

If you haven't done so yet, please try the steps below:
If the above doesn't work, please restart your Fitbit device once again as suggested here How do I restart my Fitbit device? Note: Restarting the device doesn’t delete any data. If the restart doesn't work try to change your clock face. If this fixes the issue, you can change your clock face back to the original clock face.

When my Charge 5 started having rapid battery loss, I restarted and recharged my device multiple times over several days. As soon as I saw a rapid drop in battery, I restarted my Charge 5 and put it on the charger until it was back to 100%, often doing this multiple times in a day. Eventually, this process got my device "unstuck" and the battery went back to lasting 6-7 days. Although there's no guarantee that this will work for your situation where your device stops working, it might be worth a try to see if this process can get your Charge 5 to stay on during the day.
