I’ve tried EVERYTHING multiple times. However, one thing I can’t do is get my iPhone to forget the device as there’s no (i) next to Charge 5 in my Bluetooth list. Something weird going on here. Is it the latest update!?

For what it's worth, my Charge 5 is not syncing properly with my Cronometer App... it's syncing, but giving more than double the Activity information. There is a known issue with that right now - but I'm not sure it has anything to do with your issue.
