I recently got a new Fitbit Charge 5 because my old one got water damaged. Fitbit replaced it and was super helpful. The new one that I have though is stuck on version 188.58 even though my old one was on 194.91. I really want to be able to have the updated exercises and exercise shortcuts but I can’t figure out how to update the firmware, any suggestions ?

How long have you had it? It takes a few days. If you just got it, be patient.

Then ignore what I said about it taking a few days to get firmware updates on replacements.

Apparently, the last firmware update for the Charge 5 was suspended. We are hoping that there will be another firmware update that will give us access to the new features.
For what it's worth, My Charge 5 is on the same firmware version as your replacement. I think I'm in one of the last groups to get updates.
