Hi, If I just just start walking or jogging will by fitbit charge 5 start tracking on its own?

By default, after 15 minutes of a walk or run, it tracks on its own. More info: https://help.fitbit.com/articles/en_US/Help_article/1785.htm

Yes. It's a great function. I use it a lot at the gym. I don't set anything and at the end of my class, Fitbit has listed it as Aerobic exercise. I usually rename it and slightly change the beginning and ending times as it doesn't think the cooldown is exercise and shortens my actual lesson time slightly.
I've had it automatically recognize my jogs before but it does take a while to kick in, so I actually set those up as activities and press start and stop. Anytime I'm walking swiftly somewhere, it automatically marks it as a walk.
It's quite impressive.

It tracks SOME activities automatically. It's quite good at detecting walks / runs / bike rides. But it unfortunately does not automatically detect and track circuit / interval training sessions. In fact, it's worse at this than my Alta HR, which at least picked up and tracked part of my circuit / interval training sessions. The Charge 5 doesn't detect these at all. Which I find surprising, because my heart rate is certainly elevated enough for long enough for it to be able to pick up that I'm doing intense physical activity, but it just doesn't. Yes, I can manually select the circuit training exercise and start/stop it, but by now, the Fitbit software should be able to detect these types of activities automatically.

If you have to stop and setup each exercise, that in itself is time consuming. I find it constantly takes you to the Home Screen whenever you have to tap to setup an activity or even a function. I had a Versa and the only issue was that it stopped working and I got replacements. I never expected this much "drama" from a Fitbit watch hence the reason I bought the Charge 5
