Could someone explain the difference between the heartbeat info I get on the ECG vs the heart rate on the regular read out. They come out very different

The heart rate info measures how many heart beats per minute. The ECG app measures heart rhythm and monitors atrial fibrillation. It can be helpful for detecting irregular heart rhythm. This page explains the Fitbit ECG app in more detail: What is the Fitbit ECG app
