My Charge 5 has stopped heart rate and sleep tracking etc. I opened a case on 29/8 (Case ID 8-3940000036945) and am still waiting to hear back. I can see that there was an update to the case 6 days ago (and it still says the case is in progress) but I have no idea what the update was. Is there any way to track what is happening with a support case?

Unfortunately, none of us here have access to that kind of information, not even the Moderators.
You will have to contact Support, give them the case #, and ask them if they will provide any info about the update.
