I can’t figure out how to display heart rate on the Home Screen. Seems to randomly default to something else.

Hello & welcome @KDRR
If you want your heart rate on the main screen of your Charge 5, you might want to consider using the Runliner or Slashed clock face. Both of those displays your heart rate on the main screen without having to scroll through all your metrics.
I prefer the Runliner clock face since it has colorful bars that show me my progress on Steps, Active Zone Minutes, and Miles as well as my heart rate.
