Welcome to the Fitbit community, @Myrealnameisjo!
To adjust display timeout for your Charge 5 first swipe down from the clock face to Settings. Tap that to select, then swipe to find Display Settings. Tap that and swipe to Screen Timeout afterwards. By tapping Screen Timeout you now can switch between Default, Medium and Long. There'll be a notice about increased battery consumption when selecting Medium or Long that you'll have to confirm.
