My previous screen has been replaced by something that is totally inaccurate (showing pace, calories, etc. that are totally wrong; I guarantee that I have not walked 5 miles in less than an hour). However, my phone reads the "correct" (I;m sure) information about date, steps taken, sleep, etc.

Could you please provide a few more details about this? Before considering other options, please make sure that you've tried the restart procedure using the charging cable, as described in this article, then check if you continue to experience the same behavior. In the meantime, you can find more useful information about the accuracy of Fitbit devices and how to adjust your stride length and dominant hand settings here.
Regarding the calories, please check that all your personal settings in your account are correct as well (sex, age, height, weight).
