Am I able to still get Zone Minutes without the vibration notifications? I don't want it to vibrate every few minutes.

@SunsetRunner   Yes, you will get the zone minutes with the vibration notifications off.  The Charge 5 will give notifications for everyday activity and when using the Exercise app.  You must turn them off on both feature areas.  Please see this Help article for complete instructions.  It's a fairly long article, because it covers every device type.
