When editing an exercise and then choosing "categorize exercise" I seem to be limited to Bike, Golf, Hike, Interval Workout, Run and Walk. I have established exercise shortcuts of Walk, Outdoor Workout, Hike, Interval Workout, and Bike. Why aren't these the same?
Also, why isn't skiing listed as an exercise option?

When you choose an exercise from Categorize Exercise, you should enter the first few letters in the search box. I could find Skiing, Cross Country Skiing and even Water Skiing there.
Hopefully you will be able to find them too.

Ok, I see that now but it takes several tries before the search window comes up. The home screen shows # of steps, then # of days, then it shows my workout. When I did my workout today, I recorded it on my fitbit as an outdoor exercise. Somehow, it's now showing as "Bike" in the app on my iphone. How did this happen and how do I change it back to "outdoor workout"?

I have no idea how your exercise category changed. Maybe an accidental swipe or tap?
In answer to your other question:
Go to the Today Screen on your App, scroll down to Exercise, tap.
Tap on the exercise you want to change. Tap on the arrow on the far right side of Categorize Exercise, tap.
Enter the exercise you want to change it to in the search box. Perhaps you’d prefer a more specific entry than the generic ‘Outdoor Exercise’, for example Skiing or whatever exercise you actually did.
Select and then go back to the Exercise Screen and the name should have changed.
If you would like to edit the start or finish time or distance, you can tap the 3 dots (…) at the top right and select Edit Exercise.
It sounds complicated because I broke it down to explain it step by step. In reality it’s really quick and easy to do. I let my Fitbit auto recognize my Studio Classes at the gym as Aerobic Exercise and then edit it later to give the correct class name.
