Last night it only registered going to bed time and wake up time, not even awake/asleep stages. And wake up time is off by almost an hour - 5:40am instead of 6:30am and I definitively was not awake at 5:40.
I uninstalled and reloaded app, cleared data and cache, restarted phone, restarted fitbit.

Have you tried editing your sleep log in the Fitbit app? If you haven't done this before, this help page (<-- click) has the steps to follow.
Just to let you know, there's currently an issue on the Fitbit side where editing the sleep log doesn't update the sleep stages and sleep score. The team is aware of the issue and has been working on fixing the problem.
I understand that a new app update, ver 4.57, which should be rolling out soon and likely contains the fix for the sleep log editing bug.
