In the Fitbit App (Android), can be similiar for iOS:

 

On the main screen, tap the menu button in the upper right corner.

 

On the next page, tap the button displaying your tracker to open the trackers settings page. When the tracker supports clock faces, a button is displayed 'clock faces'.

 

Tap the button, afterwards possible to choose the clock face desired. When sync'ing the new clock face is displayed.
