Should view this through website account just to confirm you have all options available to you.
Workout Record is from the database and you select type of exercise, start/duration times, some intensity level (distance, pace/speed, hard/easy) and optional to put in your own calories or Fitbit calculates for you.
Can edit some things after the fact, otherwise just delete and create another.
This replaces the calorie burn for that chunk of time for what Fitbit estimates.
Activity Record is telling Fitbit a start/stop time to look at the stats it already has for a chunk of time, you can call it whatever label you want and edit it later, add notes, view the HR/step info, ect.
You can edit much more, and deleting it doesn't remove the stats, just the showing of them. Can recreate it, can create another one with extra 5 min, whatever. Merely a snapshot you might say for that chunk of time.
Can be done after the fact, can be started and stopped as done also.
When you start a workout on device - you get an Activity Record.
So from your description not sure if you started it at time of workout, or logged it yourself later. So not sure what you have.
For biking, if you had HR being done, Activity Record would be good for calorie burn and stats - obviously distance based on steps is meaningless.
If no HR, or perhaps you have power meter and accurate calorie burn, deleting record you have and creating another Workout Record would be best to input your own data.
Actually - do both. That's what I did.
Activity Record first to see the Fitbit stats with no modification, call it whatever you want that will make review easier - shoot, in the label you can put the distance or route name or such. Be consistent so it makes review easy, like - Road ride 30k, avg 25kph, N Farmington route, 20C, wind N 5k
Workout Record second to replace the calorie burn with your more accurate info if you have it, or what Fitbit calculates on speed.

if you look on the app, and click on the day you did the activity, you can edit from there. just click what you want to edit, choose the pencil at the top and change it to whatever you like.

See you guys around.

@JuanJoFitbit at least on Android, you cannot edit exercises (with some exception of editing the name but it's not what the thread is about).
