My cardio fitness score has got very low, dispite my increase in exercise over the last few months. I've looked it up and people have said that it'll only be accurate if I do a 10 minute GPS run. The problem is that I can't run due to a medical issue, will a fast walk count if I record it as a run? Is there any other way to get a more accurate score?

Yes, I believe that will work, as long as you use Run mode and have GPS or Connected GPS enabled. The only other ways to get your score better is to lose weight and lower your resting heart rate. Check out the article from Fitbit below for more information on Cardio Fitness Score:
