I do different types of workout classes each week and for each one I have always just set my fitbit to "workout" instead of bootcamp, yoga, kickboxing, etc. Is there any benefit in setting it according to the actual workout you are completing? Or is that mainly just for your own personal log? I know for yoga it's hard to get any steps in at all (because you're not actually stepping..) but I didn't know if the yoga mode would change that all.

The main benefit of using specific workout modes such as Spin or Elliptical, is that the tracker can know the relative intensity of each of those kinds of exercises. This helps it calculate how many calories were burned in that session. An hour of cycling should generate more calories burned than an hour of yoga (not always but most often).
If you do a lot of exerises in circuit-style training, it may not be worth the hassle to start and stop the workouts for each exercise. You'd end up with multiple workouts per session, which may make seeing them as a whole more difficult. In this case, just using Workout mode for all of them is easier.

If you have an HR tracker than it will give you calories burn based on intensity of your hear rate so changing it to the proper work out would create a log for you. Otherwise its exactly as Dave said.
I don't bother because I rely on the HR function to show intensity.

I use the tracking to compare performance in similar activities to see if I'm improving, had a bad day, etc.
