How do I "track" things like chopping wood?

Not know what model you have I cant really say. But if you have one that uses the exercise function then you could use workout mode for it and then set up a custom activity to rename it.

Thanks. I have a Charge2. If I search "workout", I get Tabata Workout, and it isn't that intense!

On the computer Dashboard clink on the gear and go to settings. Scroll down until you see Exercise Shortcuts. Expand it and select up to 7 that you want. Make Workout one of them
Sync your device. Then when you scroll through the different screens on your device and come to exercise screen scroll through the ones you selected and choose the one you want to use. Use the Button and push it in to start it and then use the button to push it in to stop it when done.

I agree with @WendyB: the generic "WORKOUT" activity is your best option for wood chopping (and plenty of other activities that have not their own labels).
