Why does the fitbit add steps for taking the dog for a walk ext? I do two hour training classes where you walk and train your dog the entire time. I feel bad adding that time to my activities when it adds steps, after the fitbit tracks your steps as well.

You do not add the activity when the fitbit did it already.
The only activites you add are things that are not step based like swimming, yoga, weights etc.
So by adding them as well you are doubling your steps that you really did not take
