How do you know how many calories you have burned with activities you add to the tracker?

If you leave it blank, FitBit will approximate the number of calories based on your weight and the specific activity. Obviously some fitness machines nowadays (treadmill, exercise bike, etc.) give you an estimate of calories burned if you prefer that, or there are many conversion charts out there, such as mayoclinic's online chart. If you leave it blank, FitBit does a fairly good job of estimated based on time, exercise, and current weight, although I think it's a little low on the weight-lifting numbers.
If you're asking how to look them up afterwards, go to your Activities Tab on the Log, and scroll to the bottom. It will have calories burned calculated.

I'm going to assume website usage.
And you said activities you add to the tracker, so I'm assuming you did add it.
Look right under the graph of daily steps or burn and there is the line for your activity, with steps given it, miles done, and calories given.
Don't be afraid to experiment - you can delete the activity after all, it doesn't delete Fitbit's data, it replaces it. But if you remove it, Fitbit's is back again.
