My husband works construction, and I always feel like he needs a meat and potatoes meal when he gets home at night. But I'm also trying to get away from eating potatoes. Looking for alternatives. I have been trying to do more with brown rice, but that gets old too!

What about mashed cauliflower? There are lots of recipes online for it. I usually roast my cauliflower in the oven with some onion and garlic for 45 min then blend it up with chicken broth or almond milk.
Sweet potatos are a good option too!

I've had good results from steaming cauliflower, then "mashing" it in my food processor with butter and a little mustard.
Also, if you are tired of rice, how about quinoa? A very healthy grain with a lot of protein.

another vote for mashed cauliflower. just made the following recipe this weekend:
1 head of cauliflower
2-4 Tbsp grated parmesan cheese
2 tbsp butter
1/2 tsp garlic powder
salt and pepper
1/4 cup chicken stock
bring pot of water to a boil. cut cauliflower into florets and put in steamer insert. steam florets for 10-11 minutes. drain and put florets into food processor. process for about 10 seconds. scrape down sides of bowl. add other ingredients. process for another 30 seconds and then check. add more chicken stock as needed to bring to the right consistency. add additional seasoning to taste. scarf.

How about sweet potato?
It's still a potato but less starchy and is actually one of your five a day unlike normal potatoes.

@SunsetRunner beat me to the punch.
Switch from potatoes to sweet potatoes. Sweet potatoes are wonderful for you (and actually aren't a starch, like a regular potato. They're an actual vegetable)

I dont think potatos are the enemy, its what you do with them. Sweet potatos are yummy and good for you. Pass on the butter and sugar!

In the "meat and potatoes", it's not the potatoes (which are a nearly perfect food), it's the meat that causes the calorie and vital nutrient problems. Meat s/b once per day, and no larger than the palm of your hand.

Thanks for all the replies. Definitely going to try the mashed cauliflower. And I forget about sweet potatoes I guess. Just not something I buy often, but I guess I need to!

Try potato soup with a bit of cream, that's really simple and feels relaxing after a working day.

Hi there @LeslieAB! Cauliflower sounds like a great idea. If you also wish to substitute the "meat" on your meal, try cooking some eggplant. You can follow any of the delicious recipes listed here.
Good luck!
