Does anyone have experience with Celery Juice?

Well, generally speaking, eating veggies is a good idea. That would apply to celery too. But is there something special/magical about celery (whether the branch or the root variety)? I don’t think so. Celery likely contains a fair amount of fiber and micronutrients, but so do many other veggies. If your diet includes plenty of different fruits and veggies, you don’t have to worry about what each of them has and hasn’t (in terms of micronutrients). As to why drink it as juice instead of eating it whole? Good question. From a nutritional point of view, eating the thing whole certainly makes more sense. Many people will view juice as an easier / more "palatable" way to ingest items that would require chewing if eaten whole, or leave an unpleasant feel/taste in their mouth.

In addition to losing the benefit of the vegetable's fiber by juicing it, an important thing about eating the vegetable as opposed to just the juice is that digestion starts in the mouth. When food is chewed, an enzyme in the saliva (amylase) starts the breakdown of the carbohydrates in the food. When the vegetable is juiced, and person drinks the juice, this enzyme is not activated.
