this one makes a LOT of chili.  we make the whole bunch and freeze a bunch.  you can always substitute in ground turkey/chicken.  you may have to adjust cook time though.

3 pounds ground beef (regular or chili grind)

2-3 medium onions, chopped

3 cloves garlic, minced

1 - 28 ounce can diced tomatoes

1 – 8 ounce can tomato paste

1 cup water

3 heaping tablespoons ground Chili Powder

1 heaping tablespoon ground Cumin

1 tsp. ground Paprika

1 tsp. dried Oregano

½ tsp. Salt

1/4 to 1 tsp. ground Cayenne

1 small can diced chilis, mild or hot

In a large pot or Dutch oven, sauté onions until translucent.  Add meat and sauté until grey in color.  Add the rest of the ingredients.  Partially cover and simmer for 3 to 4 hours.  Taste and adjust seasonings.   Serves 6 to 8.

Oh man! I have my grandma's epic chili recipe; I'll get back to you if she's willing to give it to me. Apparently it's a family secret Smiley LOL

Veggie chilli maybe considered blasphemy to some (and I might have agreed a couple of years ago), but I can recommend this - http://www.jamieoliver.com/recipes/vegetables-recipes/veggie-chilli/#XRycMXb5UdKhIH0y.97
